Francesca is the girl behind @cakeofdreams, and also the maker of the most infamous ‘morning after’ pancakes. Based in LA (via East London), she makes the most delicious and beautiful cakes you ever will see (glittery cherries anyone?). This recipe for her ‘Grainless Pink Pancakes with Roasted Strawberries’ is gluten free, but if you are having trouble finding any of the ingredients, there is an option for a simpler batter recipe at the bottom. ‘Grainless Pink Pancakes with Roasted Strawberries’

Ingredients

4 servings

1/2 cup ground almonds - 50g

1/3 cup potato starch - 60g

1/3 cup coconut flour - 56g

1/4 cup tapioca starch - 30g

1 tsp baking powder

2 tsp beetroot powder

1 cup milk of your choice - 250ml

2 eggs

1 tbsp melted coconut oil, plus more for the pan

1 punnet strawberries, washed, hulled and sliced 

2 tbsp balsamic vinegar 

2 tbsp coconut sugar

sprinkle cinnamon

Note - You can make a simple pancake batter with 200g Doves Farm gluten free self raising flour, 1 egg, 300ml milk of your choice, which is amazing and make the topping as described.

Heat the oven to 190C.

Slice your strawberries in half and in a bowl mix them up with the balsamic, sugar and cinnamon. You can add a little black pepper if you like. Over and marinate for ten minutes, then place on a baking tray in the hot oven for 15 minutes. Meanwhile, combine all dry ingredients and then whisk in the wet.

Brush a skillet with coconut oil and cook the pancakes for just a minute or so on each side - they brown more quickly than regular pancakes because of the nut flours.

Serve your pancakes with the roasted strawberries. You can also slice the strawberries thinner, roast them and add this to the pancake mix when you add the wet ingredients in if you like your pancakes with a strawberry shortcake vibe.

Serve the lot with coconut yogurt, some salty butter and maple syrup for a fairly healthy, uplifting pink power brekkie of dreams.
